After handpicking to ensure only completely ripe cherries are processed, cherries are depulped and fermented for 24 hours before being dried on a patio until they reach the required humidity and moisture level.\u003c\/p\u003e\n\u003cp\u003eThe Santa Barbara region lies at the foothills of the Cuchumantanes mountain range - the highest non-volcanic mountain system in Central America. A unique mix of warm and cool air currents protects the area from frost, creating ideal conditions for coffee cultivation at elevations up to 2,000masl.
